Sushi, in Japanese cuisine, is a rice-based food cooked with rice vinegar, sugar and salt and combined with various types of fish, seaweed, vegetables and eggs.
These types of fish can be raw or cooked, usually accompanied by gohan rice, rolled in a strip of seaweed or placed in a small pocket of tofu.
The word sushi, in Japanese, refers to a huge range of foods prepared with rice. Very often, however, the term is understood as raw fish, or as a reference to a restricted genre of Japanese foods, such as maki or sashimi (only raw fish).
